Ingredients:
  • 2 cups mixed vegetables carrot, beans, peas, potato
  • 1 onion sliced
  • 2 tomatoes chopped
  • ½ cup grated coconut
  • 2 green chilies
  • 1 tsp ginger-garlic paste
  • 2 tsp kurma masala or garam masala
  • Curry leaves cinnamon, cloves, cardamom
  • 2 tbsp oil
  • Salt to taste

Method
 

Instructions:
  1. Grind coconut, green chilies, and spices into a paste.
  2. Heat oil, sauté onion and ginger-garlic paste.
  3. Add tomatoes, cook till soft.
  4. Add vegetables and masala paste, cook with water until tender.
  5. Simmer until creamy.

  • Serve with chapati, parotta, or puri.
  • Pairs well with idli or dosa.
  • Enjoy with steamed rice.
