Avial – South Indian Mixed Vegetable Curry

Avial is a traditional Kerala dish made with mixed vegetables, coconut, green chilies, and yogurt, seasoned with curry leaves and coconut oil.

Avial – South Indian Mixed Vegetable Curry

Avial is a classic Kerala-style South Indian curry made with mixed vegetables, coconut, and yogurt, tempered with curry leaves and coconut oil. A must-have in traditional Sadya feasts.

Ingredients
  

Ingredients:
  • 2 cups mixed vegetables carrot, beans, yam, drumstick, raw banana
  • 1 cup grated coconut
  • 2 green chilies
  • 1 tsp cumin seeds
  • ½ cup yogurt slightly sour
  • 2 tbsp coconut oil
  • Curry leaves
  • Salt to taste

Method
 

Instructions:
  1. Cook vegetables in salted water until tender.
  2. Grind coconut, green chilies, and cumin into a paste.
  3. Add paste to vegetables, cook for 2–3 minutes.
  4. Stir in yogurt and mix gently.
  5. Drizzle with coconut oil and curry leaves.
