Ingredients:
  • 2 carrots chopped
  • 1 cup green beans chopped
  • 1 cup cauliflower florets
  • 1 potato diced
  • 1 onion sliced
  • 2 green chilies slit
  • 1 cup thick coconut milk
  • 1 tsp turmeric powder
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp black peppercorns
  • 1 tbsp oil
  • Salt to taste

Method
 

Instructions:
  1. Boil the vegetables until just tender.
  2. Grind coriander seeds, cumin, peppercorns with a little water into paste.
  3. Heat oil, sauté onions and chilies. Add ground masala and turmeric.
  4. Stir in cooked vegetables, salt, and thin coconut milk. Simmer for 10 minutes.
  5. Add thick coconut milk at the end, stir gently, and switch off heat.
