  • 4 ripe tomatoes chopped
  • 2 green chilies slit
  • 1 tsp ginger paste
  • Β½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp jaggery optional, for balance
  • 2 tbsp oil
  • Salt to taste
  • 1 cup sev thick variety
For Tempering:
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • Pinch of asafoetida hing

Method
 

Cooking Instructions
  1. Heat oil, add mustard, cumin, hing, and green chilies.
  2. Add ginger paste, tomatoes, turmeric, chili powder, coriander powder, and salt. Cook until tomatoes soften.
  3. Add jaggery (optional) for sweet balance.
  4. Just before serving, add sev on top and mix lightly.
