  • Vegetables:
  • 1 cup surti papdi flat beans
  • 1 cup baby potatoes
  • 1 cup purple yam suran
  • 1 cup small brinjals
  • Β½ cup raw banana pieces
For Muthia (fenugreek dumplings):
  • 1 cup fenugreek leaves methi, chopped
  • Β½ cup besan
  • Β½ cup wheat flour
  • Β½ tsp turmeric
  • Β½ tsp chili powder
  • 1 tsp sesame seeds
  • Salt & oil
For Masala Paste:
  • Β½ cup grated coconut
  • 2 tbsp sesame seeds
  • 2 tbsp roasted peanuts
  • 2 tsp ginger-garlic-green chili paste
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 2 tbsp jaggery
  • Lemon juice

Method
 

Cooking Instructions
  1. Prepare muthia by mixing ingredients, shaping into small dumplings, and frying until golden.
  2. Make masala paste with coconut, peanuts, sesame, ginger-garlic paste, spices, jaggery, and lemon juice.
  3. Stuff masala into brinjals and bananas.
  4. Heat oil in a heavy-bottomed pan, add all vegetables and masala, mix well.
  5. Cook on low flame, covered, for 35–40 mins, stirring occasionally. Add fried muthia towards the end.
