Instructions:
- Cook Noodles: Cook noodles according to package instructions until al dente. Drain, rinse with cold water, and toss with a little oil to prevent sticking. Set aside.
- Prepare Manchurian Balls: If using homemade, prepare and fry them according to the recipe for ‘Veg Manchurian Dry’. If using store-bought, ensure they are fried until golden and crispy. Set aside.
- Prepare the Gravy: Heat 1 tbsp cooking oil in a wok or deep pan over medium-high heat. Add minced garlic, grated ginger, and slit green chilies. Sauté for 30 seconds until fragrant.
- Sauté Vegetables: Add finely chopped onion and bell pepper. Stir-fry on high heat for 2-3 minutes until vegetables are crisp-tender.
- Add Sauces & Seasoning: Reduce heat to medium. Add light soy sauce, red chili sauce, tomato ketchup, white vinegar, and black pepper powder. Mix well.
- Thicken Gravy: Pour in vegetable broth or water. Bring to a gentle simmer. Add the cornflour slurry, stirring continuously until the gravy thickens to your desired consistency.
- Combine & Garnish: Add the fried Manchurian balls and cooked noodles to the thickened gravy. Toss gently to coat them evenly. Cook for another 1-2 minutes, ensuring all ingredients are well coated and heated through. Garnish with chopped spring onion greens and serve hot.
