  • 200 g noodles Hakka noodles or egg-free noodles
  • 1 tbsp cooking oil
  • 4-5 cloves garlic minced
  • 1 inch ginger grated
  • 1/2 cup mixed vegetables julienned (carrots, bell peppers, cabbage)
  • 2-3 tbsp Schezwan sauce homemade or store-bought
  • 1 tbsp soy sauce light
  • 1 tsp white vinegar
  • 1/2 tsp sugar
  • 2 tbsp spring onion greens chopped (for garnish)

Method
 

Instructions:
  1. Cook Noodles: Cook noodles according to package instructions until al dente. Drain, rinse with cold water, and toss with a little oil to prevent sticking. Set aside.
  2. Prepare Schezwan Sauce: In a separate small bowl, whisk together all sauce ingredients: Schezwan sauce, light soy sauce, white vinegar, and sugar. Set aside.
  3. Stir-fry Aromatics & Vegetables: Heat 1 tbsp cooking oil in a large wok or pan over high heat. Add minced garlic and grated ginger. Stir-fry for 30 seconds until fragrant. Add julienned mixed vegetables and stir-fry for 3-4 minutes until crisp-tender.
  4. Combine & Sauce: Add the cooked noodles to the wok with the vegetables. Give the prepared Schezwan sauce a quick whisk and pour it over the noodles and vegetables. Toss everything together vigorously for 2-3 minutes until the sauce thickens and coats all ingredients evenly.
  5. Garnish and Serve: Garnish with chopped spring onion greens. Serve hot immediately.
