Dal Baati Churma (Rajasthani Signature Dish)

Dal Baati Churma is the crown jewel of Rajasthani cuisine. This traditional dish combines crispy wheat baati (bread rolls), spicy dal (lentil curry), and sweet churma (crushed wheat sweetened with ghee and jaggery). It represents the true flavors of Rajasthan’s royal kitchens and is a must-have at weddings, festivals, and special occasions.

For Baati:
  • 2 cups whole wheat flour
  • ¼ cup semolina sooji
  • ¼ cup ghee
  • 1 tsp carom seeds
  • Salt to taste
  • Water as needed
For Dal:
  • ½ cup toor dal pigeon peas
  • ¼ cup moong dal split yellow lentils
  • ¼ cup chana dal Bengal gram
  • 1 onion chopped
  • 2 tomatoes chopped
  • 2 –3 garlic cloves minced
  • 1 tsp ginger paste
  • 2 –3 green chilies slit
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin seeds
  • 2 tbsp ghee
  • Salt to taste
For Churma:
  • 1 cup whole wheat flour
  • ¼ cup ghee
  • ½ cup jaggery or sugar
  • 2 tbsp chopped nuts

Instructions
    Step 1: Prepare Baati
    1. Mix flour, semolina, ghee, carom seeds, and salt.
    2. Knead into a stiff dough with water.
    3. Shape into medium-sized balls.
    4. Bake at 180°C (350°F) for 25–30 minutes, or cook in a tandoor until golden.
    Step 2: Cook Dal
    1. Pressure cook all dals with turmeric and salt until soft.
    2. Heat ghee, add cumin, garlic, onion, tomato, and spices.
    3. Add cooked dal and simmer for 10 minutes.
    Step 3: Make Churma
    1. Knead flour with ghee into a stiff dough.
    2. Make small balls, bake until crisp.
    3. Crush and mix with jaggery and nuts.
