Gatte ki Sabzi (Gram Flour Dumpling Curry)

Gatte ki Sabzi is one of the most iconic Rajasthani vegetarian dishes, made with besan (gram flour) dumplings simmered in a spicy yogurt-based curry. Since Rajasthan’s dry climate limited access to fresh vegetables, besan became the hero ingredient, leading to this flavorful dish that is now enjoyed worldwide.

For Gatte:
  • 1 cup gram flour besan
  • 2 tbsp yogurt
  • ½ tsp carom seeds
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • 1 tbsp ghee
  • Salt water (to knead)
For Curry:
  • 2 cups yogurt
  • 2 tbsp gram flour
  • 1 onion finely chopped
  • 2 tomatoes pureed
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • ½ tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 2 tbsp ghee

Instructions
    Step 1: Prepare Gatte
    1. Mix besan, spices, yogurt, and ghee into a stiff dough.
    2. Roll into long cylindrical logs.
    3. Boil in salted water for 8–10 minutes.
    4. Slice into small pieces.
    Step 2: Make Curry
    1. Heat ghee, add cumin + mustard.
    2. Add onion, ginger-garlic paste, tomato puree, and spices.
    3. Whisk yogurt + besan and add slowly while stirring.
    4. Simmer for 10–12 minutes.
    Step 3: Combine
    1. Add sliced gatte into curry.
    2. Simmer for 5 minutes and serve hot.
