Papad ki Sabzi- Rajasthani Papad Curry

Papad ki Sabzi is a quick and unique Rajasthani curry made with roasted or fried papads (lentil wafers) simmered in a spicy yogurt-based gravy. This dish is a perfect example of Rajasthan’s innovative cooking style in arid regions where fresh vegetables are scarce.

  • 6 –7 papads moong dal or urad dal
  • 1 cup yogurt whisked
  • 2 tbsp gram flour besan
  • 2 tbsp ghee or oil
  • 1 onion chopped
  • 1 tomato chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • Salt to taste
  • Fresh coriander for garnish

Method
 

Instructions
  1. Roast or lightly fry papads and break into medium pieces.
  2. Whisk yogurt with gram flour, turmeric, chili powder, and a little water.
  3. Heat ghee, add cumin seeds, onions, and ginger-garlic paste, sauté until golden.
  4. Add tomatoes and dry spices, cook until soft.
  5. Add yogurt-besan mixture and cook on low heat until gravy thickens.
  6. Add papad pieces and simmer 2–3 minutes.

Notes

🍴 Serving Suggestions
  • Best enjoyed with steamed rice or bajra roti.
  • Serve hot, garnish with fresh coriander.
